GRADING

For the best quality, our pork is hand-selected before it ever reaches you. Each cut of Chairman’s Reserve Premium Pork undergoes vigorous scoring tests and visual confirmation to make sure standards for color, marbling and pH levels are met: and believe us, that’s a thorough inspection!

MARBLING

Those white flecks you see in pork are what’s known as “marbling.” It’s the small pieces of fat that occur in between muscle, and it’s a huge part of what makes our pork taste delicious. That’s why we insist on high marbling scores in every cut we sell.

pH

pH is the measure of acidity in the pork. Finding the perfect pH level is instrumental in getting tender and juicy pork. With Chairman’s Reserve Premium Pork, the pH is tested on a strict scale to make sure you’re getting the most tender, and therefore, the best pork!
